Easy Vegetable Soup Recipe
I remember eating my grandmother’s homemade vegetable soup as a child. The soup was very simple, using inexpensive ingredients. I do not have the recipe that she used, but this one is pretty close to her soup. This recipe uses fresh vegetables and canned tomatoes. This soup is very easy to make in less than an hour. You will see that this is the easiest soup recipe you have ever made.
You can make it with either chicken stock or vegetable stock. Most people think it tastes better with chicken stock, but the results are also very good with vegetable stock if you want to make the soup vegetarian.
Ingredients
- One medium yellow onion
- One celery stalk
- Two carrots
- Four Potatoes
- 10 mushrooms
- One can of tomatoes
- Six cups of vegetable or chicken stock
- Salt and pepper
Directions
- Chop the onion, celery, carrots, potatoes, and mushrooms.
- Place in a large pot with the six cups of stock. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- The soup is done when the potatoes are tender.
