A Delicious Oreo Cupcake Recipe

Quick easy desserts are fun to make.  This Oreo cupcake recipe is part of a series of hubs on Oreo cookie recipes.  This recipe uses a cake mix but you can substitute your favorite cake recipe from scratch if you wish.  There are two types of recommended cakes for this recipe:  yellow or chocolate.  The yellow cake has a less intense chocolate flavor than using the chocolate cake.   Both work equally well so choose the one that suits your taste.

Cupcake Ingredients:

1 box of yellow or chocolate cake mix

Frosting Ingredients:

1 pound of confectioner’s sugar

One half cup of vegetable shortening

One quarter cup of warm water

1 tsp. of vanilla extract

One half cup of finely crushed Oreo cookies

Garnish Ingredients:

12 whole Oreo cookies

Prepare the cake mix per the directions on the box.  Line muffin pans with paper liners. Pour the cake batter into muffin tins about ¾ full.   Bake 20 to 25 minutes.  Allow to cool completely.

To make the icing, mix the warm water and vegetable shortening together.  Gradually add the confectioner’s sugar and mix until creamy.  Then mix in the vanilla extract.  If the icing is too thick, mix in 1 tbsp. of water at a time until the desired consistency is reached. 

Spread the icing onto the cupcakes and garnish with one Oreo cookie on top.  This recipe yields about 12 cupcakes.
