Easy Mexican Rice Recipe
This Mexican rice recipe is a classic side dish in Mexican cuisine. It is incredibly quick and easy Mexican recipe to make. It only takes about 30 minutes to make and the results are well worth the time invested.
Ingredients
2 cups of uncooked long grain white rice
4 cups chicken broth
3 cloves of minced garlic
1 onion
1 chopped tomato
1/2 cup tomato sauce
2 teaspoons cumin powder
1 chopped chili pepper
2 tablespoons olive oil
Salt to taste
Preparation
Heat olive oil in pan over medium heat. Add the rice once the oil is heated and stir rice for a few minutes until brown. Add the rest of the ingredients and bring to a boil. Lower heat to low and cover with a tight fitting lid. Heat on low for 20 minutes or until all the water is absorbed. Stirring the rice is not necessary when cooking. If all the water is not absorbed, cook a few minutes longer.
