Strawberry Mousse

This strawberry mousse recipe is very easy to make. Be sure and use fresh strawberries for the best results. You can use frozen strawberries when they are not in season, but fresh strawberries work the best. You could also use this recipe to make a strawberry mousse pie. Simply pour the mousse into a baked pie crust and let it chill in the refrigerator.

This mousse has a pink color, making it perfect for Mother’s Day or Valentine’s Day. If you do not like the pink color, you can add a few drops of red food coloring to make it redder in appearance.

Ingredients

One pound of strawberries, cleaned with the stems removed

½ cup water

½ cup sugar

One envelope of unflavored gelatin

Two cups of whipped cream

Directions

In a small sauce pan heat water, sugar, and unflavored gelatin on low heat until the gelatin and sugar are dissolved. Remove from heat and let cool to room temperature.

Pour the strawberries into a food processor and process on high until smooth.

Combine the contents of the sauce pan and the strawberries into a large mixing bowl. Fold in the whipped cream until completely combined. You can also mix in some sliced fresh strawberries with the whipped cream.

Pour into server dishes and refrigerate for a minimum of one hour, preferably overnight.

Top with fresh sliced or whole strawberries and whipped cream.
